Schilo's dishes sparkle your imagination, they call up emotions and take you to other places, times and lives

Taiko, the award-winning restaurant of the Conservatorium hotel in Amsterdam, was created by Executive Chef, Schilo van Coevorden to honour beautiful flavours and textures from across the Far East. The dishes are modern-Asian inspired, the atmosphere is international, Amsterdam-casual. Taiko experience is made complete and irresistible to local as well as international gourmets, by the extraordinary devotion of chef Hugo Engels, the deliciously eye-catching desserts of pastry chef Gino Gebhard and the dedicated attention to detail by manager, Ritesh Chakawri.

A visit to Taiko is a sensational experience in all its aspects

Just like the iconic works in the famous museums next to the hotel, Schilo's dishes sparkle your imagination, they call up emotions and take you to other places, times and lives. New York vibes and Hong Kong mystics come together effortlessly in this Amsterdam gem. No matter where you come from, here you will feel completely at home. And whether it is the legendary sushi you come for, the handmade gyoza, the Wagyu steak that melts on your tongue, or an extensive food journey: you will always leave Taiko enriched with an everlasting experience.

I love to create the perfect symphony of flavour with Asian ingredients

People could hear the students practicing their drum solo's

In the early days while walking along the Paulus Potterstraat when the windows were open, people could hear the students practicing their drum solo's. The room where the drum lessons of the Conservatorium van Amsterdam, the music school after which the hotel is named, were being held, is exactly where Taiko restaurant is now located. A remarkable detail is that this fact only came to light after the name Taiko was born - which is the Japanese collective name for several percussion instruments. Just like in the past, the sounds of the drum bounce of the walls, thanks to the percussionist who plays the Taiko drum during dinner every Friday and Saturday night.
