Long before the four elements of earth, air, fire, and water came into being, legend speaks of a fifth pillar, often regarded as the source of everything around us. This unseen, intangible element was later given a name to reflect its basis as an origin for us all, and today, represents a source for our mind, body, and spirit to return to – Akasha. We extend our Akasha Spa at Taiko Cuisine combining earth, air, fire and water with Taiko’s elements: beauty, flavour, aroma and texture. During Detokkusu, meaning detox in Japanese, we serve a five-course pescetarian menu focussing on health and well-being (five-course vegetarian menu is also possible). People could hear the students practicing their drum solo's
In the early days while walking along the Paulus Potterstraat when the windows were open, people could hear the students practicing their drum solo's. The room where the drum lessons of the Conservatorium van Amsterdam, the music school after which the hotel is named, were being held, is exactly where Taiko restaurant is now located.

Taiko, the award-wining restaurant of the Conservatorium Hotel, was created by Executive Chef, Schilo van Coevorden to honour beautiful flavours and textures from across the Far East. The dishes are modern-Asian inspired, the appearance is international and the atmosphere is Amsterdam-casual.

Together with his team of professionals from, among others, China and Japan, Schilo monitors authenticity, always putting creativity first.
Just around the corner from the hotel in Amsterdam, is where Schilo van Coevorden has his roots. Asia, however, has his heart. As a chef, with classical French education, Schilo was very early on triggered by the exotic flavours and textures of the Far East. Using Taiko and Taiko Bar as the canvas on which he can exhibit his creativity.
