Concept of the Year: Umi no kuni

Executive Chef Schilo van Coevorden presents a concept, inspired by all the splendour that we house in our own country. Partly due to the lockdown, Van Coevorden, who travels a lot to gain inspiration in other cuisines, was no longer able to visit abroad and therefore went on a journey of discovery in his own country. Here he became fascinated by the fresh seafood and local ingredients found in Zeeland, 'The Land of the Sea'.

Guests can expect dishes with local ingredients from Zeeland, served with influences from Asia and the Middle East. For example, the Hiramasa Kingfish, also known as Dutch Yellowtail, is on the menu and is served as a tasting of Sashimi, Shisha Sushi and Maki. Zeeland's Finest including Cockles "Nam Jim", Mussels "Green Curry" and Oysters "wasabi" is also a star, as is the Grilled Wild Duck with White Kimchi and Duck Egg Tamago. The traditional Bolus cannot be missed for dessert.

Taiko Cuisine & Bar

Following the latest announcement from the Dutch government, restaurants and bars in The Netherlands are allowed to stay open until 5 p.m. Taiko Cuisine will be open for lunch on Saturdays and Sundays from 12 until 5 p.m. serving a special 5-course menu. Taiko Bar will be open from Thursday to Sunday from 12 until 5 p.m. Kindly note that the coronavirus entry pass system applies to our restaurants, lounge, bar and meeting and event spaces.
